3/4 CUP SHORTENING-PART BUTTER OR MARGARINE, SOFTENED
1 CUP SUGAR
2 EGGS
1 TEASPOON VANILLA-(IF USING HAITIAN VANILLA, USE 1/2 TEASPOON)
2-1/2 CUPS FLOUR
1 TEASPOON BAKING POWDER
1 TEASPOON SALT
MIX ALL TOGETHER. COVER AND CHILL FOR ABOUT AN HOUR. THIS MAKES
THE DOUGH A LITTLE STIFFER AND EASIER TO ROLL OUT.
HEAT OVEN TO 400 DEGREES. ROLL DOUGH OUT 1/8 INCH THICK ON A LIGHTLY
FLOURED BOARD. CUT INTO DESIRED SHAPE. PLACE ON AN UNGREASED BAKING SHEET. BAKE 6-8 MINUTES OR UNTIL VERY LIGHTLY BROWN. MAKES ABOUT 4 DOZEN 3 INCH COOKIES.
COOL THOROUGHLY BEFORE ICING. I JUST MIX POWDERED SUGAR AND SOME MILK. I
MELT ABOUT TWO TEASPOONS OF BUTTER AND MIX IT INTO THE ICING. MIX IT WITH
A BEATER TO GET ALL THE LUMPS OUT. IT IS REALLY EASY TO PUT TOO MUCH MILK
IN THE ICING. ADD ONLY A LITTLE AT A TIME TILL YOU GET THE RIGHT CONSISTENCY.
